German caterer KAISERSCHOTE wants to drive sustainability in event catering. The company has developed a comprehensive package of sustainability measures to keep the carbon footprint in business and private catering as low as possible.
The Cologne-based caterer had already been committed to implementing CO2-neutral events in recent years, designing and implementing climate-neutral, environmentally friendly catering concepts. KAISERSCHOTE Managing Director André Karpinski would like to continue along this path with new measures. For example, "meatballs" containing meat are soon to be a thing of the past. "Soon, all burgers and meatballs will be exclusively vegetarian or vegan", says André Karpinski. To this end, the chefs at KAISERSCHOTE are creating their own recipe based on peas and chickpeas.
According to Karpinski, vegan dishes are not only delicious and healthy, but also particularly sustainable because of their favorable carbon footprint. The "vegan square meter" therefore gets its fixed place at the buffets made by KAISERSCHOTE. This new catering concept is well received by customers. Furthermore, the waste of any resources is taboo, a "must" is the avoidance of foodwaste. The company’s motto is: "Only when you can’t leave anything out, it’s perfect."
KAISERSCHOTE creates buffets and plated dishes on request "in PUR," which means reduced variety and focus on the essentials. This is then reflected in the precise use of food, for example in dessert buffets that convince with clarity, in live-cooked main courses that are basically vegetarian or vegan and with less meat as topping. The sustainability and regional origin of the ingredients is just as important as the use of pasta, flour, spices and eggs in organic quality. Fittingly, André Karpinski relies on the production of his own honey. The caterer uses the healthy ingredient from his own production to refine, for example, dill-honey mustard sauces or "powerballs" for special moments of enjoyment.
To avoid waste and food wastage, all food in production is temporarily stored in Tupperware products, everything on stainless steel covered with thin cling film. Vacuum bags are avoided and disposable cans are replaced with jars and porcelain.
KAISERSCHOTE compensates the remaining CO2 emissions in cooperation with its partner Woodify, which relies on the replanting, reforestation and maintenance of native forests and woodlands for CO2 neutralization. "Our ecological footprint is very important to us, and with the help of Woodify we are now even climate neutral", the Cologne-based entrepreneur explains his ecological commitment.
